Then the next thing you know it’s February and all the chocolates start coming out for Valentine’s day and even though you think i’ll just eat one, we all know where this is going. Or the weather outside gets even colder then it is now (I love winter) and your “plan” to go for a run daily gets put on the back burner, or the I’m too tired excuse just sort of rolls right off the tongue. Lucky for you BIG butts are in right now no???

You know that saying…
It always kind of blows my mind when I go to the grocery store and get to the check out counter and I start noticing the things in the carts around me: Case of coke Frozen Pizza Bags of chips Carton of ice cream Box of cookies Low fat yoghurt (that’s my favourite one) You know there’s a whole other section of the grocery store you missed, it’s called the produce department… Healthy doesn’t have to be hard and if you follow me not only will it be easy but flippin’ delicious. I’m a healthy food blogger and I approve this message. So let’s leave the big butts to Kim Kardashians, unless you’re looking for a good party trick for 2015.
Black Bean Burgers with Coconut Brussels Sprouts
1 can of BPA free black beans
2 large carrots peeled
1 small red onion
2-3 garlic cloves
2 tbsp grapeseed oil
2 tbsp coconut aminos (WAY better than soy)
1 tsp cumin 1 tsp oregano 1 tsp chili powder 1/2 tsp chili flakes
handful of fresh cilantro
3/4 of chickpea flour
3 tbsp of flaxseeds ground into meal mixed with 1/3 cup warm water
salt and pepper to taste
10 brussels trimmed
1 tbsp coconut oil
1/4 tsp chili flakes
salt and pepper to taste
Preheat your oven to 400 and line a baking sheet with parchment paper then set aside.
In a food processor throw all of your ingredients in there except for the last three, depending on your food processor you may need to do this process in steps. Pulse until everything starts to come together then transfer your “burger” mix into a large bowl and add in your remaining ingredients.
Form your patties and toss them onto the pan lined with parchment and into the oven they go for about 25-30 minutes. You’ll want to flip them half way through.
For the Brussels this is a serving for one so if you plan on entertaining you’re going to want a bunch more brussels.
First up get your coconut oil and chili flakes in a pan and set that to a medium heat. Once the coconut oil has melted toss in your Brussels. (You’re are going to want to make sure they are cut side down) Then cover your pan and let them hang out in the heat for about 5 minutes, after 5 minutes with the cover still on just give your pan a good shake and lower the heat slightly and leave the Brussels sit for about another 2 minutes.
If you’re like me and you like to peek at the things you’re cooking when you know you should probably just leave the lid on be warned that the combo of steam and chili flakes will literally take your breath away, so don’t go hovering your face right over the pan or a coughing fit will follow. And that’s it, a vegan feast fit for a king, or in my case a go to lunch that I frequent often. I like to eat my blk bean patties with a huge hit of hummus and fresh sprouts on the side… YUM!!!
