Maple Cinnamon Granola

The chocolate is my jam and I usually enjoy one of these with a handful of nuts or seeds on the side. But what’s in these breakfast drink concoctions you ask??? Well let me tell you… I have three that I interchange depending on my smoothie mood.

1) Kale Banana-Berry 1 banana, ½ cup of blueberries, 1-2 kale leaves with a pinch of cinnamon.

2) Chocolate Covered Cherry 1 banana, ½ cup of pitted dark cherries, and on occasion if I’m feeling wild and crazy I’ll even throw a tbsp of almond butter in there.

3) Tropical Greens 1 banana, ½ cup of mango, big handful of spinach and about ½ cup of yoso unsweetened coconut yoghurt, this one is also good with a spoonful of cashew butter. I don’t add protein to this concoction because i’m not sure chocolate belongs here.

These are made with Silk unsweetened almond milk, and if you use frozen fruit when blending up these bad boys it’s like eating a bowl of ice cream for breakfast, and I like to eat my smoothies with a spoon, the thicker the smoothie the better.

But on occasion I like to switch things up, keep things interesting in the am, give my breakfast a little kick in the pants.

Cinnamon Maple Granola

Ingredients:

1 cup of raw buckwheat groats
1 1/2 cups of quinoa flakes
1/4 cup flaxseeds (whole not ground)
1 cup unsweetened coconut flakes
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/2 cup coconut oil
1/4 cup maple syrup
1 tbsp cinnamon
1/2 tsp nutmeg
pinch of salt

Preheat oven to 250F

Line 1 large cookie sheets with parchment paper and set aside.
Combine all of the dry ingredients together into a large bowl and try not to eat it all before it becomes granola.

In a small sauce pan, gently heat your maple syrup, coconut oil and spices over medium low heat until combined then pour over your dry ingredients. Mix it all up until everything is combined

Spread evenly onto your lined cookie sheet and bake for 1 hour.
Once the hour has passed let your granola cool on the baking sheet, it is not until the granola has cooled completely that it will start to hold together.

Feel free to switch up the nuts and seeds or add in some dried fruit, just be sure to send some my way if you create something delicious.
