Blender Banana Muffins

The text goes through and then it hits you, you’ve just sent a message to the wrong person. Sheer panic quickly sets in because now how do you make it stop before it gets to where it’s going?!? Thanks to good ol technology taking over communication these days I feel like this probably happens on the daily.

Personally I’ve had many a close call, but would always catch myself before doing something incredible stupid, until I didn’t… I can still remember the moment exactly,  I was up bright and early after a surprisingly good first date filling everyone in I knew on this guy, when my mom chimes in and says “text me a picture”. So I head over to my bumble account, screen grab all four of his profile pictures and then text them off to mom for her approval.

Or did I???

I’d like to blame it on the alcohol, only I was stone cold sober and just opened the wrong text and then continued to message the guy from the date 4 pictures of himself. I remember just staring at my phone wanting to go back in time and not be such a knob. Instead I opted for a quick and witty response and wrote: “Really happy this guy showed up last night”.

Don’t ask I was going for cute and sassy instead of completely insane, no bunnies on the stovetop today thank you very much.

But speaking of insane, these muffins are insanely good and almost too easy to whip up.

Blender Banana Muffins

1 cup of almond flour
3 bananas
3 eggs
1 teaspoon baking powder
2 tbsp honey
1/4 teaspoon sea salt

Preheat your oven to 350 and then line a muffin tin with liners and then set aside.

Toss all of your ingredients into your blender then blend for about two minutes or until your batter is smooth and the bananas are broken down.  Divide into your muffin tin (I found it was about a 1/4 cup scoop per), and then into the oven it goes. You’ll want to bake for about 15-20 minutes, but watch them carefully towards the end as nut flours have a higher fat content and will brown faster.

You’ll know there done when you do the knife in the middle test and it comes out clean.
