You know those sleeping beauties that you see on airplanes, or waiting in lounges, or even sitting next to you in a movie that are not only asleep, but actually look as though they’re comfortable??? I hate those people, I can barely get in a solid six when I’m in my own bed. My sleepless nights actually started when I was just wee, I use to suffer from these fun little things called night terrors. I would wake up in the middle of night doing what might make most parents want to trade in a kid for an upgrade. Like the time I went looking for my foot in my parents dresser drawers tossing their clothes out in a fit of joy, or the time I ran into the basement and started counting up by two’s standing at the foot of my grandmothers bed. Shocked grandma stuck around after that night cap.
If I had a boyfriend he’d be reading this right now thinking “Ummmm!!!” Don’t worry, the night walker in me has moved on, I now just suck at sleep, you’re welcome.
But you know what I don’t suck at… snacks, so next time you find yourself tossing and turning and unable to get in some solid zzz’s, I say give up, get up, and get to snacking. Because isn’t eating in the middle of the night more fun than sleeping anyway???
Time for apple nacho and I’m sure when I say the word “nachos” the last thing you think about is anything apple related. But I promise you apples are the best possible vessel to scoop up delicious toppings like: peanut butter, granola, and chocolate chips.

Apple Nachos
1 Honey Crisp Apples sliced into bite sized wedges
2 Tbsp. of natural peanut butter
1/4 cup granola (I used my banana bread granola cause that shit is BANANAS!!!)
1 Tbsp. of dried blueberries or raisins
2 Tbsp. dark chocolate chips
And a drizzle of Bee Keepers Natural Honey (I’m OBSESSED)
Plus you can’t really go wrong when it comes to putting these bad boys together, and the best part is the toppings can be changed to whatever your little heart desires.
Plus an apple a day keeps the doctor away.
