Last year best friend Trish and I decided that we needed a little R&R, so we booked a last minute vacay to Jamaica and managed to score a pretty sweet deal at a super fancy pants 5 star all inclusive resort.
We arrived suitcases in hand ready for a week of fun in the sun. The nice added bonus about this resort was that it also had a water park. So after some serious convincing on my part, we climb about 4 stories high to get to the top of this slide where you are given 4 choices of which one to brave. Let’s just say I chose wrong. All of a sudden I felt like Jennifer Connelly in the Labyrinth, making the wrong choice and being thrown into a tunnel of darkness by the helping hands.

I was shot out of my slide like a bullet from a gun and was introduced to a fun little injury called a bone bruise. The rest of my Jamaican getaway was spent in a wheelchair and the rest of best friend Trish’s vacay was spent pushing my a$$ around in said wheelchair. Lucky for us we were given a redo. The resort felt so awful about what happened that they gave us a free trip at a different resort for this year. So off we went, suitcases packed, and this time it was going to be a waterslide free experience. Little did we know that we had also signed up for a one week surprise Mexican “cleanse”
Normally I love a good surprise but this one was kinda shit. But wait, it gets better. Fast forward to one week later happy to be home and back attempting to get my body back to normal when all of a sudden I started feeling a bit off??? Next thing you know there I am curled up on the floor waiting for an ambulance to arrive. Paramedic just scooped me up in his arms and carried me out to the truck. Funny I thought if a strong man every carried me off in his arms it would be into the sunset not into an emergency vehicle. Beggars can’t be choosers i guess.
It was a night I hope to soon forget and while I contemplated writing another letter to complain to the resort, I think that maybe I should just quit while I’m ahead, and by ahead I mean still alive.
So to celebrate my survival I call this my probiotic kick in the A$$ lunch.
Ingredients:
½ cup of Kimchi (I like Ontario Natural)
1 egg
1 big handful of spinach
1 tbsp. coconut oil
12-15 Mary Crackers
Salt and pepper to taste
In medium frying pan heat up your coconut oil then toss in your egg, you just want to scramble it and to cook an egg if your coconut oil is hot enough takes 1 -2 minutes max. Next toss in your chopped up spinach. You only want to wilt your spinach slightly, so once wilted add in your Kimchi, salt to pepper to taste then onto your plate with a side of Mary Crackers.
I like to use my crackers as a Kimchi scoop.
