Honey + Coconut + Buckwheat

We all do it… some of us 3 times a day, some people 5, in the kitchen, in bed, on the couch, in the car. Sometimes it’s quick because we’re in a rush or sometimes we take our time and really enjoy every moment. It can be messy or super fancy pants, like when we get all dressed up before hand and really go to town.

For all you dirty birds out there I’m referring to eating, cow crumbs is a PG place geez…

But the other day it was brought to my attention that while I do enjoy eating I do NOT enjoy people that chew with their mouths open.

Seriously… were you raised in a barn??? Actually pretty sure even if you were raised in a barn that at some point or another in your life your mother looked at you from across the dinner table and said “honey, please chew with your mouth closed”

I’m really happy you’re enjoying what you’re eating, but I would prefer if I didn’t have to hear your enjoyment in every bite. You might as well sit beside me and picked your nose.

Actually don’t do that either. I’ll make you a deal… You chew with your mouth closed and i’ll fill it full of tasty granola, it’s a win win for both of us.

Honey Nut Coconut Buckwheat Granola

Ingredients:

1 1/4 cups raw buckwheat groats
1 cup unsweetened flaked coconut
1 tbsp. ground cinnamon
1/4 teaspoon salt
1/4 cup honey
1/4 cup melted coconut oil
1/4 cup flaxseeds
1 teaspoon pure vanilla extract

Preheat oven to 250 degrees F. and line a baking sheet with parchment paper.

Combine all of your ingredients together into a large bowl and mix it up until everything is coated in the coconut oil and honey goodness.

Spread the mixture evenly onto your baking sheet, toss into the oven and bake for 1 hour or until golden brown.

Let cool completely before you dig in or before storing it in the fridge. I popped mine into the freezer because I just couldn’t wait for it to cool. Call me impatient but granola is kind of my drug of choice.
