During the week I always struggle to come up with easy go to lunches that are delicious and take zero time to throw together. Sadly the days of going through a drive through or grabbing a 6 inch sub are long gone. But there are still days when I miss a good burger frosty fries combo, the subs I can live without…
But today we are going to put an end to this dilemma and make a healthy salad that will last in your fridge for the full work week AND you can just switch it up everyday with a different protein or dressing. Because if you can master making a good dressing then you can change up your salad without really changing up your salad, see what I did there… sneaky and smart all rolled into one.
Quick Colourful Kale Salad
Ingredients
1/2 head of red cabbage chopped or grated
1 head of kale finely chopped
3-4 large carrots peeled and chopped
Dressing
1 tbsp Olive Oil
1/2 tbsp apple cider vinegar
Salt and pepper to taste
This salad comes together so quickly it will make your head spin, ready… Food processor: run the cabbage, run the carrots, run the kale. Big bowl, everything in it, done.
I like to throw some roasted pumpkin seeds and sunflower seeds with a little organic ham for one day, and then some roasted chickpeas and walnuts for another.
Word to the wise, don’t dress your salad until you’re ready to eat it, keeps it tasting fresh longer. I’m telling you people this salad is the little black dress of lunches.
