Sometimes in life we crave things that we can’t have, and lately I find in the evening right around 8ish, I want cookies and I want them NOW! You’d think I’d be more prepared for snack attacks with my reserves kept in the freezer, but what I’m really craving I have yet to master. Because I’m craving cookie that I can really sink my teeth into, with chocolate (obviously) raisins, cranberries, pumpkin & sunflower seeds, I want the WORKS!!! A cookie that eats like a meal, and then I’d lather it in almond butter and just a little bit of sea salt. Mmmmmmmm
This idea or should I say madness, all unfolded a few nights ago at 8pm exactly, I knew I could whip up these dream cookies in probably 15 minutes total, and then have them in the oven STAT which would take another 15 minutes give or take, so on my plate if I timed everything correctly in 31 minutes. So at 8:31pm I would be enjoying a delicious homemade cookie, or two, maybe three, possibly four. And friends don’t judge friends, remember that.
But I did one better… into the oven they went in 14 minutes flat, because I rule and managed to shave off one whole minute, I impress even myself. That’s me in the pic below, minus the moustache of course. But you should have seen me, I was like Cirque du Soleil come to life.
But the baking for 15 minutes could not have passed any slower, and then that oven timer went off and man was I jazzed. Being the smart “cookie” that I am I thought you know what I’m going to bring these to the basement and pop them into the freezer to cool for just a minute or two moving my eating time up, sheer genius I know. So there I am, biggest grin on my face thinking about how good these cookies were going to taste, just needed to hold out a few minutes longer (this conversation is all going on in my head while I carry the trays of piping hot cookies into the basement. Only I get about 5 steps in on my journey and the oven mitts that mom got on sale, lets just say it felt like I wasn’t wearing oven gloves at all.
MY HANDS WERE ON FIRE!!! So It was my hands or the cookies, and even though for a brief moment I thought screw your hands they’ll heal, I chucked the trays into the air and watched my cookies rain down. The best part is not only did the cookies yard sale all over the basement floor but the trays also flipped over and landed on top of the cookies so there was zero chance of the 5 second rule.
That night I spent half an hour cleaning the basement floor and then ate a frozen brownie and sulked the entire time.
I call them my EVERYTHING but the Kitchen Sink Cookie (because there is pretty much everything in there except the kitchen sink)
1 GF flour (I like Bob’s)
1 cup quinoa flakes
1/2 cup unsweetened coconut
1/2 cup pumpkin seeds
½ cup sunflower seeds
1/2 cup cranberries
1/2 cup raisins
1/3 cup coconut sugar
2 tbsp molasses
2 tbsp maple syrup
1/2 cup dark chocolate
2 tbsp. flaxseeds (ground)
1/2 tsp salt
1 tsp baking soda
1/2 tbsp cinnamon
1/2 cup coconut oil melted
1/4 cup almond milk
Preheat your oven to 350 and line to two cookie sheets with parchment paper and set aside.
In a large bowl sift all of your dry ingredients toss in your quinoa flakes and stir to combine.
In a another bowl combine all of your wet ingredients and then marry the two bowls together.
Fold in your dried fruit and chocolate then using a large spoon measure out your cookies. Size of the cookie is really up to you. But for a cookie that eats like a meal, this recipe makes about 20.
Toss them into the oven for about 16 minutes rotating the trays half way through your bake time. You want them to be slightly golden brown.
My only piece of advice is when you remove these from the oven and decide to take them for a walk like I did, make sure your oven gloves aren’t from the dollar store.
